ROMERITOS FOR CHRISTMAS

In this great festivity, the traditional Romeritos can not be missing from your table. Here we give you the recipe to make you look great.

What you need:

  • 1 kg clean romeritos
  • 1/2 chopped onion
  • 2 Cloves of garlic, chopped
  • 3 tomatoes without seeds and small cubes
  • 200 gr red mole paste
  • 1 lt Chicken broth
  • 250 gr Dry shrimp
  • 2 cooked potatoes and medium cubes
  • 4 Chopped and cooked nopales
  • 4 tablespoons of oil
  • Salt to taste
  • Pepper to taste

Preparation method:

  • Boil water and add salt, add the romeritos and cook for 5 minutes.
  • Remove and place in a bowl with water and ice to stop cooking. Strain and reserve.
  • Soak the shrimp in very hot water for 5 minutes. Remove the shell and reserve.
  • Acitrona the onion and garlic. Add the tomato
  • Add the mole paste and half the chicken broth.
  • Cook for 10 minutes and let cool.
  • Blend with the other half of the broth until you obtain a smooth and smooth sauce. Salt pepper.
  • Sauté the sauce and cook until lightly thickened, and cook for 5 minutes.
  • Incorporates shrimp, potatoes and nopales. Rectify seasoning and serve.
  • Accompany with bread or tortillas.
