For this day without meat, we are going to share a lentil taco recipe that is really easy to prepare.
What we will need:
- 1 cup of raw lentils
- ¼ white onion, finely chopped
- 1 tablespoon of vegetable or olive oil
- 1 tablespoon cumin
- ½ teaspoon of paprika or sweet paprika
- 1 teaspoon oregano
- 1 teaspoon of salt
- ½ teaspoon of pepper
- 1 clove of garlic, finely chopped
- 1 teaspoon of vegetable bouillon powder or organic vegetable seasoning
- 2 ½ cups of water
- Corn tortillas, the necessary
- Avocado, to serve
- Lettuce, to serve
- Tomato, to servePreparation method:
- Clean the lentils and remove -if you come to have- garbage or pebbles.
- In an anti-stick frying pan soften the onion with a little oil over medium heat. When you have a transparent color add the lentils.
- Add the cumin, paprika, oregano, salt, pepper, garlic and chicken broth and cook for 3 minutes mixing continuously.
- Add the 2 ½ cups of water, mix and cover.
- Reduce the heat and let cook for 30 minutes. Check the lentils, if they are still hard, continue cooking for 5 to 10 more minutes (with the lid).
To serve: Heat the tortillas, add lentils, tomatoes, chopped lettuce and avocado. Season the vegetables with little salt.
