INGREDIENTS
- Soybean textured in small pieces or fillets.
- One bar or two tablespoons of achiote
- A cup of orange juice (as acid as you can get)
- Salt and veggie consommé
- A chipotle chili
- Onion and garlic
- Vinegar
- Coriander

- Tortillas
- Sauce to your liking
INSTRUCTIONS
Step 1.
Grind the following in the blender: orange juice, salt, consommé, achiote, a splash of white vinegar or the one you have, the chipotle and a little onion and garlic. It should be medium texture, neither too liquid, nor too thick.
Step 2.
Cut an onion into thin slices and fry in a clay or non-stick casserole until it becomes transparent. Incorporate soy and liquid from the blender. There should be left over, so that when cooking it is absorbed and hydrated. Leave it on medium heat moving regularly until you see that it thickens and the soybean swells.
