These Mexican-style jamaica flower tacos are one of the most requested recipes lately. It is also very simple; all you have to do is prepare the jamaica water as usual and reserve the flower, do not throw it away because you can make enough recipes with it.
If it is still very hard (depends on the freshness of the flower) you can boil it for a few more minutes so it softens and then rinse it with water to remove any dust, dirt or grime that may have inside the flowers.
The ingredients are:
- 2 cups hydrated jamaica flower
- 2 red tomatoes or chopped tomatoes
- ¼ finely chopped white onion
- 1 jalapeño chile or serrano minced
- ¼ cup cilantro
- Salsa, to serve
- Lemon juice, to serve
- ½ teaspoon olive oil
Elaboration
- Chop the flower of Jamaica. It is the flower that you have left after preparing the jamaica water.
- Rinse under the stream of water. If the flower is very hard it still boils for another 5 to 8 minutes over medium high heat.
- In a pan heat a little oil and cook 5 minutes the tomato, onion and chili. If you do not want to chop, remove the seeds from the chili or omit it.
- Add the chopped jamaica flower, cilantro and season to taste with salt and pepper.
- Mix well and serve in corn tortillas or toast.
- Accompany with salsa, lemon juice and avocado or guacamole (optional).
