RECIPE WITHOUT MEAT: POTATOES ENCHILADAS

Potato and bean enchiladas

Ingredients:
500 grams of peeled and diced potatoes
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon sea salt
500 grams of green tomatoes
1 thick chopped onion
1 bunch of chopped coriander
Corn tortillas
1 can of drained whole beans
375 grams of fresh cheese
Vegetable oil
Preparation
1. Preheat the oven to 200 ° C. Season the potatoes with the cumin, chili powder and salt. Mix well and place the potatoes in a greased refractory. Bake in the preheated oven between 20 to 25 minutes, until the potatoes have softened.
2. Meanwhile, boil the green tomatoes and onions in boiling water, until the tomatoes change color. Remove from heat, drain well and let cool a little. Then, blend the tomatoes and onion with half of the cilantro.
3. Heat a generous amount of oil in a small skillet. Pass the tortillas through the hot oil for a few seconds so that they soften, but taking care not to brown them.
4. Mix the potatoes with the beans, half the cheese and the remaining cilantro. Fill the tortillas with this mixture and roll it up. Arrange the stuffed tortillas in a greased refractory and bathe with the green tomato sauce. Sprinkle with the rest of the cheese.
