A RICH WAY OF FEEDING: NOPALES SALAD

The nopales are consumed regularly in Mexico, belong to the family of the cactus and have many properties since they are very good to fight diabetes, high cholesterol, constipation, etc. and they are high in fiber, vitamins and minerals.

Usually you find them without thorns, but if not, you will have to remove them yourself before cooking them, holding the cactus and passing the knife as shown in the photo.

After this, you should:
· Cut into squares or strips.
· Cook in salty hot water until they lose their green color a little.
· Strain the water.

Nopales Salad
Ingredients
· 2-3 tender medium cut and cooked nopales (check their preparation)
· 1/4 onion, chopped
· 1 chile serrano
· 2 tablespoons chopped cilantro
· 1 tbsp olive oil
· 1 cup of vinegar
·Salt and pepper to taste

Instructions:
Mix all the ingredients and put in the refrigerator for one hour. You can change the quantities of the ingredients to your liking.
