ANOTHER DAY WITHOUT MEAT: DELICIOUS ENCHILADAS!

We have already told you about the benefits that the organism brings to eliminate meat from the diet, at least one day, and even though it does not seem like much, this practice brings great benefits:

So that together we enjoy the benefits of a day without meat, we leave you a recipe for one of the favorite foods at home, in a different version with beautiful nopales:
Ingredients for the sauce:
– 1 tablespoon of olive oil
– 2 cloves of garlic, chopped
– 1 teaspoon chopped onion
– ½ teaspoon dried oregano
– 1 teaspoon dried parsley
– ½ teaspoons of chili powder
– 1 pinch of ground black pepper
– 1 pinch of salt
– 8 red tomatoes cooked, without shell and smoothies
– 1 ½ cups of water
Elaboration:
In a large pot, heat the olive oil and sauté the garlic for 1 minute. Add the rest of the ingredients to the garlic, except water. Mix and then add water.
* Boil the mixture and simmer for about 15 minutes.

For the enchiladas:
Stir-fry the tortillas or if you want to skip the oil, just heat them.

Filling:
– ½ kg of nopales
– 1 medium onion
– Olive oil
– Salt

Elaboration:
Cut the onion into very thin slices, and medium canes the nopales.

Heat a frying pan and once it takes a temperature add a tablespoon of olive oil. Sauté the onions, then add the nopales and the pinch of salt. Cook for 7 minutes.

Serve the enchiladas with the red sauce on top.
