Breakfast is considered the main meal of the day, not only for the foods that comprise it but for the important role it plays in the body. That is why we will share a very complete and easy recipe to make.
Ingredients:
• 3 egg whites
• ½ roll of spinach
• 6 black olives
• Manchego cheese to taste
• Salt and pepper to taste
• ½ cda. of oil
For the yogurt sauce:
• 6 tbsp of natural yogurt
• ½ cucumber without shell or seeds
• ½ sprig of parsley
• 1 tbsp of lemon juice
• Salt and pepper to taste
Preparation for the omelette:
1. Separate the whites from the yolk one by one; It is easier if the egg is cold. The egg white has a better flavor and a high quality protein level, as well as other properties.
2. Cook the spinach in hot water with ½ tablespoon of salt for about 30 seconds. Let it drain and chop it in half. Chop the olives and grate the cheese.
3. In a nonstick skillet, over medium heat (since the egg white is more delicate), add the oil and incorporate the whites. Cook for about 2 minutes moving in circles, so that it takes the shape of the pan.
4. Add the spinach, the olives and the Manchego cheese to the center of the egg white cake. Fold it and let stand for 1 minute
Preparation for yogurt sauce:
1. Finely grate the cucumber and chop the parsley too finely.
2. In a bowl, mix the cucumber with the lemon juice and the parsley, add the yogurt and beat until all the ingredients are incorporated; salt and pepper to taste.
