Recipe without meat: Nopal Tacos

Nopal tacos
Ingredients:
● 1 cup of chopped nopales
● 1 red bell pepper or chopped orange
● 8 mushrooms cut in half
● ½ chopped onion
● 1 whole chili pepper (can be replaced by another)
● 1 tablespoon olive oil
● Corn tortillas

Spices
● 1 teaspoon salt
● ½ teaspoon ground black pepper
● ½ teaspoon paprika
● 1 teaspoon cumin
● ½ teaspoon dried rosemary

Avocado cream
● ½ ripe avocado
● 1 tablespoon of cream
● 1 teaspoon of sour cream
● ½ Juice of 1 ½ lemon
● Salt and pepper to taste

Process
1. In a bowl mix rosemary, salt, pepper, paprika and cumin, add chopped nopal, red pepper and mushrooms, just to season.

2. In a pan with olive oil add the chili and the chopped onion, then add the rest of the ingredients, until they are cooked.
