A DAY WITHOUT MEAT

To designate one day a week not to eat meat and to cook with vegetables, is beneficial for the health. And right there enter these nopales stuffed with ham and cheese (which may well be cheese only); are a bit laborious because they have to be empanizado, however, the result well worth the effort.

An excellent option is to fill them with a cheese that melts, but there are those who prefer to use a firmer cheese, such as panela cheese. When using a cheese of this nature, it is good to add a little epazote to give it a better flavor.

Ingredients for 4 people:
· 16 tender nopales
· 16 slices of ham
· 125 grams of quesillo
· 2 eggs
· 1/2 cup flour
· 1 cup of crushed bread
· Oil, salt and 1 teaspoon of baking soda.

How to make ham and cheese stuffed nopals

First of all, we will clean the nopals by removing any thorns they may have. Put them to boil in a pot with water, salt and baking soda until they are cooked, and then drain them as best as possible.

Next we will form a kind of sandwich. To do this, place a nopal, on top of a slice of ham and a bit of raw cheese, making sure that both ingredients are within the perimeter of the nopal. Cover with another nopal and secure everything with one or two sticks. We repeat the same process to prepare 8 pieces.

Afterwards, we will pass each piece for the flour, then for the egg and finally for bread crumbs. Heat oil in a frying pan and fry them on both sides until golden brown, then place on absorbent paper and remove excess fat.

Tasting

The nopales stuffed with ham and cheese can be served with a tomato stew, with a green salad  or simply serve as we have done this time with a little cream, red sauce and refried beans.
